Breakfasts to whet your appetite

Breakfast can pose certain challenges at Passover. I mean, how many times can you eat matzah brei? Or, what do you do if your child, like my son,  doesn’t like kosher for Passover cereals? Or is used to muffins, pancakes or waffles to get him started on his way in the morning?  Well, you improvise.

Breakfast can pose certain challenges at Passover. I mean, how many times can you eat matzah brei? Or, what do you do if your child, like my son,  doesn’t like kosher for Passover cereals? Or is used to muffins, pancakes or waffles to get him started on his way in the morning?  Well, you improvise.

The recipes below are my adaptation of some regular recipes made kosher for Passover. The first recipe is basically a muffin batter made in the form of a cake, to bring that something special to your breakfast table. The Apple Pancake Puff is made in an 8-in. square, which alleviates the problem of flipping and having a couple of skillets going.
